Finca Buenos Aires is located in northern Nicaragua, on the border with Honduras. The Nuevas Segovias region has been known to us for years as an interesting coffee region. Olman Valladarez’s family has been running the finca for 60 years. Since 2008, the family has regularly submitted its coffee varieties for the Cup of Excellence and has been among the top rankings several times. We were able to purchase the Arabica variety Red Caturra from this finca and were impressed by the clean and structured cup with well-balanced acidity during the tasting. After harvest, the beans are subjected to the so-called “washed” process. This means that the beans are separated from the pulp using a crusher, and the remaining pectin layer is microbially digested in a water basin for between 24 and 72 hours. Afterward, the pectin layer is water-soluble and can be washed off. The beans are then dried on so-called African beds or concrete surfaces. The “washed” process gives the coffee a particularly clean cup profile with exciting, complex acids – a very delicate process that brings the quality of the field to the cup.
This variety from Nicaragua is particularly suitable for filter brewing.
