A major challenge is the high sugar content of the coffee cherries. After harvesting, they must be processed and dried as quickly as possible to prevent any unwanted fermentation. The unique chemical composition is the basis for the – from a traditional coffee perspective – extravagant aroma profile, including honey sweetness, sesame, and smoked licorice. Upon opening the package, the aroma of rum pot wafts up, instantly bringing to mind Christmas. The body in the cup is impressive. The caffeine content is slightly lower than that of comparable Arabica beans (approximately <1.0%). The beans from this harvest, with screens of 14-16, are smaller than those typically found in Arabica, but exhibit a higher density. Roasters now need to broaden their horizons and develop roasting profiles adapted to this new variety.

Christmas is widely considered a family celebration. This year, a third species has joined our familiar Coffea species, Coffea arabica and Coffea canephora (Robusta): Coffea liberica. Strictly speaking, there are even two: Coffea liberica liberica and Coffea liberica dewevrei.
