Pick up at the Roastery

A major challenge is the high sugar content of the coffee cherries. After harvesting, they must be processed and dried as quickly as possible to prevent any unwanted fermentation. The unique chemical composition is the basis for the – from a traditional coffee perspective – extravagant aroma profile, including honey sweetness, sesame, and smoked licorice. Upon opening the package, the aroma of rum pot wafts up, instantly bringing to mind Christmas. The body in the cup is impressive. The caffeine content is slightly lower than that of comparable Arabica beans (approximately <1.0%). The beans from this harvest, with screens of 14-16, are smaller than those typically found in Arabica, but exhibit a higher density. Roasters now need to broaden their horizons and develop roasting profiles adapted to this new variety.

Christmas is widely considered a family celebration. This year, a third species has joined our familiar Coffea species, Coffea arabica and Coffea canephora (Robusta): Coffea liberica. Strictly speaking, there are even two: Coffea liberica liberica and Coffea liberica dewevrei.

A heritage that remains palpable

Coffee is a living product. Every harvest brings new nuances, every growing region its own unique character. In our roastery, we combine experience, curiosity, and craftsmanship to bring out the best in every bean. This results in roasts with a clear structure, balanced sweetness, and depth of flavor. We understand origin as the foundation for quality – and as an invitation to continually rediscover coffee. Every cup is an expression of this philosophy: precise, distinctive, and authentically 220GRAD.

"This year, our Christmas filter coffee selection combines Coffea arabica and Coffea liberica. For our Christmas selection, all Coffea species used were individually roasted with their respective roasting profiles and then blended together. This ensures that the different chemical compositions, sizes, and densities of the beans are taken into account, guaranteeing optimal aroma potential and balance in the cup. In a filter cup, this selection evokes the festive aromas of mulled wine and preserved fruits."
