The goal of this blend is to achieve a balanced cup for espresso, cappuccino, and lungo, despite the prior decaffeination process. The beans in this selection were decaffeinated using the ripening aroma of sugarcane from Colombia – meaning a hint of sugarcane still lingers in the cup. The cup profile is clearly "flatter" or less intense in terms of the familiar coffee aromas than coffees without decaffeination. Nevertheless, it's a fine cup without the infamous caffeine kick.

"Through our collaboration with Belco from Bordeaux, we have found a good partner for decaffeinated coffee. Decaffeinated coffee cannot be purchased from individual producers, as the quantities required for decaffeination are too small and therefore too expensive. This means that Belco creates quality labels under which many producers can sell their harvest for decaffeination according to defined quality criteria. This is somewhat comparable to Ethiopia, where usually up to 400 small farmers deliver to a washing station."
