Many avid readers of German literary classics have been asthonished by the dense succession of timeless works published in such a short period of time. The works of Herder, Wieland, Hölderlin, Heine, Kleist, Goethe, Schiller, and many other followed one another in comparatively short succession from the second half of the 18th century until 1800. Where did this sudden cultural flowering in the German-speaking world come from?
There's a good theory: as foundation for the Weimar Classicism, many works by English and French authors were translated into German. Through translation, German-speaking scholars began to truly understand, organize, and ultimately refine their own language. In short, this linguistic intermingling transformed German from a crude, vulgar language into a medium for poets and thinkers. This fine anecdote also illustrates our intention for the future of our coffee varieties: we will increasingly allow the beauties of the individual coffee varieties to merge, allowing new blossoms to blossom in the cups. In the future, we will compile a careful selection – a selection – that combines the advantages of the coffee varieties and origins, thereby further enhancing and balancing the cup quality. We are thus expanding our toolbox. Until now, we have offered many of our coffee varieties from individual producers and pure varieties. Over the years, it has become clear that working with our selections, i.e., selecting and combining specific coffee varieties, has produced the most balanced and popular cup profiles. The practical reasons for our future selections are obvious. Depending on the cultivation method, climate, region, or altitude, certain coffee varieties can:
- strongly emphasize the body in the cup
- through their processing method after harvesting bring pointed sweetness
- reduce or increase the acidity in the cup
- Increase the foaming capacity of the espresso and stabilize the foam for longer
- and much more
Our challenge is to blend all these characteristics of the individual varieties into a sparkling yet balanced cup profile. As in a good kitchen, the perfect recipe must be discovered: the right bean composition and the corresponding roasting profiles. With the future focus on selections ("selections in combinations"), we have more leverage in refining. The year 2025 will bring the first new selections.
