A blend of three Arabica varieties from three different regions – El Salvador, Nicaragua, and Brazil – all grown at relatively high altitude. Cooler elevations mean more pronounced acidity – bringing freshness and vibrancy to the cup: notes of citrus, blueberry, and red berries.
How does altitude shape the flavor?
In cooler, higher-altitude regions, acids develop a sharper, brighter character than they would lower down. Body is what keeps that acidity in balance – the sensation of fullness in the mouth, whether from fat droplets or larger, well-hydrated molecules. Without enough body, lively acidity can tip into something thin or overwhelming.
It's a bit like the aeronaut Gianozzo in Jean Paul's novel: cast off too much ballast, and the wind grows uncontrollable, sending the balloon too high. In our cup, body is that necessary ballast – letting the acidity rise just high enough to feel invigorating, never overwhelming.
